Cooking sake is also one of the basic Japanese ingredients. This ryouri-shū, as cooking sake is called  in Japanese, is made from a very tasty rice.

Japanese cooking sake is used the same as wine. It makes meat softer and fish a bit odorless. It also adds umami, due to the natural sweet taste of the rice.

Japanese dishes in which ryouri-shū is used include teriyaki, nikujaga, sukiyaki etc.
